1. The Seasoning You Can’t Buy in a Jar

We normally think of smoke as a cooking method. You smoke ribs. You smoke brisket. You smoke cheese. The food sits in the smoke while it cooks, and the smoke becomes part of the finished product.

But what if we stopped thinking of smoke as a cooking method and started treating it as a seasoning?

More specifically, what happens when you capture the flavor of different woods in something as simple as kosher salt?

That gives us an interesting experiment.

Take the same salt, expose separate batches to apple, cherry, pear, oak, hickory, and even hay smoke, and suddenly you have a small library of smoke flavors that can be added to food after the cooking is finished.

Now we can ask a much more interesting question than whether something tastes smoky.

Can you actually taste the tree?

Can you tell apple from oak? Can you recognize hickory without seeing the label? And what happens when you start combining two different smoke sources?

That’s where this stops being a barbecue trick and starts becoming an experiment in flavor.

2. Stop Cooking With Smoke. Start Seasoning With It.

If we’re going to compare different kinds of smoke, we need something neutral enough to carry the flavor without getting in the way.

Kosher salt is nearly perfect for the job.

Its larger, irregular crystals give smoke plenty of surface area to settle onto. It is also easier to control by hand than fine table salt, which matters when you’re trying to compare one batch against another.

There is another important distinction: kosher salt and table salt are not interchangeable by volume. Fine table salt packs much more tightly into a spoon or measuring cup, so the same volume can deliver considerably more salt.

For this experiment, that matters.

We don’t want the salt itself overpowering the smoke.

Kosher salt also gives us a relatively clean base without introducing unnecessary flavors that could muddy the comparison.

The goal is simple: change the smoke while keeping everything else as consistent as possible.

That turns the salt into our control surface.

3. Build the Pretzel Laboratory

You could taste smoked salt straight from your hand.

But where’s the fun in that?

Instead, we’re going to build a better delivery system: a hot soft pretzel.

A pretzel gives us bread, browned crust, salt, heat, and aroma without introducing so many competing flavors that the smoke disappears.

The Basic Pretzel Setup

Start with frozen dough rolls or another simple bread dough.

Bring water to a boil and add baking soda to create an alkaline bath. Briefly boiling the dough in that alkaline solution helps create the characteristic browned exterior we associate with pretzels.

After the bath, brush the dough with egg wash, apply your smoked salt, and bake at about 450°F until deeply browned.

The exact baking time will depend on the size and type of dough you’re using, so watch the pretzel rather than worshipping the stopwatch.

And serve them hot.

That part matters.

Heat helps aromatic compounds reach your nose, and much of what we call “taste” is actually aroma. A warm pretzel carrying smoked salt gives those aromas a chance to open up.

Now the pretzel isn’t just food.

It’s our delivery system.


4. Build a Smoke Library

This is where the experiment gets interesting.

Instead of making one batch of smoked salt, make several small batches using different smoke sources.

Think of it as building a smoke library.

Apple

Apple wood generally produces a mild, slightly sweet smoke. It should make a good starting point because it gives you smoke without immediately overpowering the salt.

Cherry

Cherry is another relatively mild fruit wood, often described as slightly sweet and fruity. Compare it directly against apple and see whether people can actually distinguish the two without knowing which is which.

Pear

Pear gives us another fruit wood, but one that is less commonly used than apple or cherry. That makes it particularly interesting in a blind tasting.

Does anyone identify something different about it?

Or does everyone simply call it “light smoke”?

That’s useful information either way.

Oak

Oak gives us our traditional benchmark.

Compared with the fruit woods, oak should produce a more familiar wood-fired character. It also becomes particularly interesting later when whiskey enters the experiment.

Hickory

Hickory moves us toward the heavier end of the spectrum.

It is commonly associated with strong, savory smoke and the classic flavor many people associate with American barbecue.

If any wood announces itself during a blind tasting, hickory is a good candidate.

Hay

And then we deliberately break the rules.

Hay isn’t wood.

That’s precisely why it belongs in the experiment.

Culinary hay can introduce grassy, earthy, toasted aromas that give us something completely different from traditional hardwood smoke.

Now we have a control group of sorts.

If people can distinguish hay immediately but struggle to separate apple from cherry, we’ve learned something.

5. The Double-Smoke Experiment

Now comes the experiment inside the experiment.

What happens if we mix smoke sources?

Not because we want more smoke, but because we want to see whether two different smoke profiles can produce a third flavor neither creates particularly well on its own.

Start simply.

Try combinations such as:

Apple + Oak

Cherry + Hickory

Pear + Oak

Apple + Hay

The interesting part isn’t whether the blend tastes stronger.

We’re looking for something else: an emergent flavor.

Maybe a combination suddenly reminds someone of cedar.

Leather.

Cocoa.

Toasted spice.

Earth.

Or something nobody can quite identify.

Those descriptions don’t necessarily mean those compounds are literally present. They’re sensory associations—the brain trying to put a familiar name on an unfamiliar combination of aromas.

And that’s exactly what makes this interesting.

Two recognizable smoke sources may create a flavor impression that neither one produces alone.

If that happens, we’ve moved beyond smoking food.

We’re designing flavor.

6. Bring in Beer and Whiskey

Now we add another variable.

Alcohol.

Not because we’re trying to turn this into a drinking game, but because beer and whiskey already contain complicated flavor profiles that may interact with smoke in surprising ways.

Whiskey is especially interesting.

Bourbon and many other whiskeys spend years interacting with oak barrels. The wood contributes compounds that help create flavors people describe as vanilla, caramel, spice, toast, and oak.

Now put an oak-smoked pretzel next to that whiskey.

We’re introducing wood from two directions.

The question becomes:

Does oak-smoked salt make the whiskey taste more “oaky,” or does the whiskey make the smoke easier to recognize?

Then switch to apple-smoked salt.

Does the whiskey suddenly seem sweeter?

Try cherry.

Try hickory.

Then move to beer.

A lighter smoke such as apple or pear may work better beside a pilsner or lager, while stronger smoke from hickory or oak may stand up better against a porter or stout.

But don’t tell your guests what they’re supposed to taste.

That’s the whole point.

Let them tell you.

7. Smoke the Salt, Not the Water

There is an old barbecue habit worth questioning here: soaking wood chips before putting them over heat.

The theory sounds reasonable.

Wet wood burns more slowly, so perhaps it produces more smoke.

But there’s an obvious problem.

Before wet wood can properly heat and combust, the water has to evaporate.

That means some of your heat is being spent turning water into steam.

For this experiment, we aren’t trying to keep a barbecue running for twelve hours. We are trying to generate controlled, clean smoke and expose salt to it.

So keep the experiment simple.

Use dry smoking material and control the heat and oxygen instead.

More importantly, watch the quality of the smoke.

Thick white, gray, or black smoke can deposit harsh, bitter flavors. What we’re looking for is the cleaner smoke barbecue cooks often describe as thin blue smoke—sometimes so faint that you can barely see it.

The goal isn’t maximum smoke.

The goal is good smoke.

That distinction may turn out to matter more than the wood itself.

8. The Blind Reveal: Can You Taste the Tree?

Now we find out whether any of this actually works.

Don’t tell anyone which pretzel is which.

Number them.

Pretzel #1.

Pretzel #2.

Pretzel #3.

Keep going through the individual woods, then finish with a mystery blend.

Give everyone a simple scorecard.

For each smoked-salt pretzel, rate:

Smoke Intensity: 1–10

Pretzel Alone: What do you taste? Sweet? Earthy? Woody? Grassy? Toasted?

With Beer: Does the smoke become stronger, weaker, sweeter, sharper, or completely different?

With Whiskey: Does it amplify the barrel character, soften the alcohol, or reveal another flavor?

Mystery Blend: Can you identify the two smoke sources?

Then compare everyone’s answers before revealing the woods.

That’s the part I’m most interested in.

Maybe everybody identifies hickory.

Maybe nobody can tell apple from cherry.

Maybe pear becomes the surprise favorite.

Maybe hay mixed with apple creates something nobody at the table expected.

Or maybe the entire experiment proves that once smoke is separated from the meat, most of us aren’t nearly as good at identifying wood as we think we are.

Either result is interesting.

Because underneath all of this is a ridiculously simple dinner:

Fire. Salt. Bread. A drink.

But change the tree, and you may change the entire experience.

So put seven pretzels on the table, hide the labels, pour the drinks, and see what happens.

Then ask the only question that actually matters:

Can you taste the tree?
